Loaded Sweet Potatoes for Chilly Nights | Cup of Jo (2)

Loaded Baked Sweet Potatoes with Creamy Lime Sauce

Katie first commented about this recipe on a post about the magic of toaster ovens. “The sauce is definitely the star,” she says. “Don’t skip it! But I make it with Greek yogurt if I don’t have sour cream and it’s equally delicious.”

You’ll need:

4 sweet potatoes
1 onion, chopped
Chili powder
Cumin
1/2 cup sour cream
1 lime
1 tsp garlic powder
1 tsp salt
Shredded rotisserie chicken
1 can black beans
Corn

Preheat the oven to 400F. Pierce sweet potatoes with a fork and bake until tender, about 45 minutes. While the sweet potatoes are baking, chop and sauté an onion, sprinkled liberally with chili powder and cumin, and make the lime sauce, by whisking together the sour cream, juice and zest of one lime, garlic powder and salt.

Once the potatoes are baked, top with shredded rotisserie chicken, one can of drained and rinsed black beans, fresh corn, sautéed onion and lime sauce.

This looks so yummy! I’ve done something similar but never thought to add chicken- good idea for adding some protein.

I also just thought of another version- there’s a sweet potato Buddha bowl recipe I love with roasted broccoli, kale, onions, spiced chickpeas and a maple tahini sauce.. it would be so yummy to do those toppings on a roasted sweet potato!

Just made this dish for lunch – so good! Used frozen corn instead of fresh, and overloaded with onions a bit (was making it for just 2 people) but the end result was delicious! Forgot how satisfying and easy roasted sweet potatoes are.. thanks!

My husband dubbed this *Sasha sauce* ?
PB, soy sauce and sambal. So yummy on a baked sweet potato!!

Can’t wait to try this lime sauce. I sometimes chop and roast the sweet potatoes to save time as well, just coat with plenty of olive oil and salt.

Well now I know a) what’s for dinner tonight and b) how to get my kids to eat the “taco skillet” I made the other day. I gave them chips to scoop up the taco meat/bean/cheese and told them it was a fun dinner, like nachos. They wouldn’t eat it! But they will eat “taco potatoes,” so here we are. Taco sweet potatoes.

Adding this to my list of easy dinners! This week we had baked sweet potatoes topped with rotisserie chicken, BBQ sauce, crumbled bacon, cheddar, and sour cream. A family crowd-pleaser!

I roast a tray of sweet potatoes almost once a week, and have an easy meal ready to go in the fridge at any moment! Mine go 350 degrees for 40 mins. Then I turn off the oven and often forget they exist for a few hours. Results in some delicious easy low prep meals all week. I’ve never tried these flavours though – it’s all going on my grocery list for this evening :)

I eat a ton of sweet potatoes because they’re so healthy, easy and the kiddos love them! They’re definitely lovelier when roasted in the oven, but in a time pinch (read: every week night) I give them a few stabs with a knife, wrap them in a damp paper towel and microwave! 8-10 min depending on how large they are and how many I’ve shoved into the microwave at once.

When I was a kid and was going to after school programs I would make pizza potatoes–baked potatoes topped with spaghetti sauce, cheese and any veggies we had on hand. They are still good as a adult.

This looks delicious and so easy! I love sweet potatoes with pork too. I’ve been meaning to try the slow-roasted method for cooking them, as recommended by Chef Michael Solomonov, but I am too impatient. Has anyone tried this, and if so does it make a difference? A few years ago I read that Ina Garten emphasized how much better they are when baked, so I did that instead of boiling or quick nuking in the microwave for a Thanksgiving sweet potato dish and it DID make a notable difference in the depth of flavor and the caramelizing just inside the jacket.
And my oven time is tight on Thanksgiving! But now I oven bake sweet potatoes, even just to serve under chili. I used her directions of 375, for an hour or until done.

I tried the slow roasted sweet potato recipe from Smitten Kitchen, and I did think it made a difference – creamier in texture than a regular baked sweet potato. Worth trying if you have the time!

Love a loaded sweet potato! We do: sweet italian sausage crumbled and sauteed with arugula, then top it all with goat cheese. So easy and satisfying!

I eat a sweet potato for breakfast everyday- topped with almond butter, blueberries and shredded coconut. Sweet potatoes are a great sub for oatmeal and the toppings are endless!

oh my gosh, my husband grew up eating “taco potato” and one night, about 2 years in to marriage, he asked if we could make it. huh? i had never heard of it…. now it’s a staple! and you can use almost any toppings.
